Take your steak out of the refrigerator and let come to room temperature, about 1 hour.
Insert one temperature probe lengthwise through the steak until it reaches the middle or thickest part of the steak. Season the steak generously with salt and pepper.
Remove the heat spreader from the grill and replace the grates. Turn on your Spark and set it to 650°F.
Keep the lid open for the first 5 minutes, and then close the lid while the grill reaches the set temperature.
Place the steak on the grill grates directly over the exposed Briq. It's normal to have flames; this is a flame-broiled steak, afterall!
Let the steak sear on the first side for about 1 minute. Flip and sear on the second side for another minute.
Flip the steak and transfer to the edge of the grill, away from the direct flame. Let grill for 2 minutes.
Flip and grill on the second side for another 2 minutes. Continue to flip and grill like this until the internal temperature reaches 125°F for medium-rare. This should take 6-8 minutes total grilling time.
Transfer the steak to a cutting board or plate, tent with foil and let rest for 5-10 minutes to allow the juices to redistribute.
Serve with your favorite steak sauce or compound butter. Enjoy!
