corn tortillas (recipe for homemade tortillas below)

mango
1
red onion
Kosher salt

lime

tomatoes

squids (I like to use the tentacles)
100 grams
sour cream
½
bunch cilantro
Black pepper
Salsa Verde (homemade recipe below)
Step 1
Start your Spark and set it to 700°F. If you decide to make the tortillas as well, place the pizza stone on the side of the rack, giving enough space for grilling next to the stone.
Step 2
Cut away the sides from the pit of the mango. Make crosswise cuts in flesh. Cut or peel segments away.
Step 3
Slice the red onions as thin as you can, add a pinch of salt and lime juice. The salt and the lime will make the onions less spicy.
Step 4
Place all the tomatoes on the grill and let them melt into themselves. Remove from the grill and place in a bowl, mix well into a sauce.
Step 5
Grill the squids until they are caramelized on one side, then flip them and keep cooking until the other side gets caramelized as well.
Step 6
While grilling the squids- prepare the tortillas and keep them covered with a towel once they’re ready.
Step 7
To assemble the squid tacos: 1. Spread a tablespoon of sour cream on the tortilla. 2. Place the melted tomatoes on top. 3. Add the onions, mango, and cilantro. 4. Add the squids. 5. Finish with a teaspoon of salsa verde.
