Grilled Romaine with Lemony Dressing and Garlic Toast

hearts of romaine
Parmesan cheese

whole bulb garlic

loaf fresh bread, Italian or Peasant

lemons, cut in half
2 tbsp
extra-virgin olive oil
¼ tsp
coarse sea salt
coarsely ground black pepper
Step 1
Preheat your Spark to 400°F.
Step 2
Cut the garlic bulb in half, brush the cut sides with olive oil and place on the grill. Roast about 10 minutes or until soft enough to easily pop each clove from its skin. Remove from the grill and mash the soft garlic into a paste with 3 tablespoons of the olive oil. Slice the bread into inch thick slices and brush with the garlic oil.
Step 3
Slice the lemons in half and place them cut side down on the grill.
Step 4
Cut each romaine heart in half lengthwise and brush with the garlic olive oil.
Step 5
Place the romaine halves and bread slices on the grill together. Cook for about 2-3 minutes or until lettuce is caramelized and the bread is toasted. The lemons should be caramelized by now.
Step 6
Remove everything from the grill. Plate each half of the romaine with a piece of toast. Squeeze the lettuce with roasted lemon juice and drizzle with the remaining olive oil. Shave large pieces of parmesan on top. Serve warm.
