Drain the tofu and then cut the block in half lengthwise so you have two slabs about 3⁄4 inch thick. Coat both sides of the tofu slabs with everything bagel spice mix.
Preheat the Spark to 500°F. Coat the grates with high heat cooking oil.
Wash the lettuce leaves, tomatoes, and onion. Slice the tomato and onion into thin slices.
Place the tofu on the grill and close the lid. Cook for about 5 minutes, then flip and cook for
another five minutes. A few minutes before the tofu is done, add the bagels to the grill to toast. If you're a cheese lover, add cheese to the tofu now so it has time to melt. Remove everything from the grill.
Assemble the sandwiches: Spread the bottom bagel half with hummus, then add lettuce, onion, tomato slices, a tofu piece, finish off with some more hummus and the bagel top. This sandwich is a bit of a smorgasbord - add any other toppings you love!
