brisket, trimmed
Liberal amount of your favorite seasoning mix or rub
Heavy duty aluminum foil
Step 1
Season the brisket liberally with the rub, patting it firmly to adhere and let sit for 30-45 min at room temperature until the brisket starts to “sweat” and the spices look tacky vs. dry.
Step 2
Follow the instructions to get both Low & Slow Briqs ignited and set the temperature to 250°F.
Step 3
Insert the temperature probes through either end of the brisket and set the probe target temperature to 155°F on the Spark app. (Note: this is not the final temperature.)
Step 4
Place the brisket directly on the grill grates, spritzing every 30 minutes with water (or your choice of flavorful liquid!).
Step 5
When the internal temperature reads 155°F (this will take ~4 hours), your brisket should have a nice dark color and bark starting to develop. Place a double layer of foil on your cutting board and place the brisket on the foil with the same side down that was on the grill. Crimp and shape the foil around the perimeter of the brisket to form a boat. The sides should come up to the top of the brisket.
Step 6
Place the brisket boat back on the Spark, and set your final internal target temperature to 200°F on the Spark app.
Step 7
Continue cooking for about 4 more hours until the brisket reaches 200°F or until the probes slide through the brisket like butter! (This can happen when the brisket has reached anywhere between 195-205°F, so use 200°F as a guide, but trust your instincts and trust that the probes moving through with no resistance is a good sign it’s done.)
Step 8
Remove the brisket and let rest for at least 1-2 hours either very well wrapped in foil or in an insulated cooler. A 4-6 hour rest in a warm cooler is preferred for the juiciest results!
