In a bowl, whisk together the dry ingredients. Add the egg and buttermilk and mix until just combined. Don’t over mix. Gently fold in the blackberries.
Preheat your grill to 700°F and place the cast iron skillet on the grates to heat up
with the grill, lid down.
When the grill is preheated and the pan is hot, melt a pat of butter in the pan. Using 1⁄4 cup measuring cup, scoop in some batter to make two small or one large pancake.
When bubbles are popping on the surface of the pancakes, flip them over and cook for
another few minutes.
Serve hot with butter, syrup, lemon zest, and extra blackberries if you like.
